Welcome to PIPERPANE©. Our site is fresh outta the oven and still piping hot!  Soon we will grow to include formulas: step by step instructions, video, class schedules and who knows what else.  My goal is to take the mystery out of sourdough (and bread in general) and get you baking delicious bread as soon as possible.

A baker once told me “It’s easy to make bread that taste goods – but hard to make bread that looks good”.  Well, looks aren’t everything! That will all come in time and with practice.  Flour, salt and water is all you need.

Meals can be built around great bread, a hearty soup, a bread salad, tartines, you’re limited only by your own appetite and imagination. With great bread, even sandwiches are elevated to higher stature, simple salami becomes Charcuterie. Your peanut butter toast will become the talk of the town! Once you discover that you can produce homemade bread in your own oven that is as good as any you’ve had, I think you’ll be just as hooked as I was.  

peel-1This isn’t the tasteless, “cotton candy” bread many of us grew up on, it’s bread with attitude! A shattery crust with a slightly bitter sweetness, notes of malt, carmel, wheat, coffee and chocolate are often present.  Crunchy crust, contrasted with a cool, creamy interior, and a good tug. This bread has great “hang time” as the flavors tarry on the tongue. No different than a great wine, beer or cheese, the slow process of fermentation develops complexity and depth to the aroma and flavor, not a fleeting memory, but a long lasting, satisfying finish.

Soon you’ll be breaking bread with family members and fortunate friends, bringing smiles and delight with each bite.  So don’t be afraid to dive into the dough, it’s fun, amazingly relaxing and will bring you joy with every loaf!
